How to make simple, spicy and juicy chicken barbeque

Winter is the season when you can sit in front of burning charcoal, waiting eagerly for what’s being cooked. In this post, I will explain how to prepare your evening with friends and family and that smoky, tendered meat. We are not going to use any sort of fancy bbq sauce or smoke chambers. This a very simple recipe, which can be prepared by anyone and make their evening beautiful.

Ingredients:

  1. Chicken thighs and breast (Medium cut) – 500 gms
  2. Fresh ginger paste – 2 tablespoon
  3. Fresh garlic paste – 2 tablespoon
  4. Onion paste – 1(1/2) tablespoon
  5. Red Chilli Paste – 2 tablespoon
  6. Curd 1/2 cup
  7. Salt to taste

Process:

  1. Mix well all the above ingredients together with chicken.
  2. Marinade it for at least 2 hours.
  3. Put the chicken on the skewers or read below for alternatives.
  4. Lit up the wood or charcoal. Let it burn properly for sometimes until the yellow flames are gone. If you start grilling on the yellow flame, the chicken will get carbon coating and won’t get cooked from inside. In order it to be cooked properly, you have to generate a good amount of proper heat from the woods. You can check it yourself by feeling the heat or when the charcoal becomes red.
  5. Put on your skewers right above the burning charcoal and cover them from above with a clay or aluminum(reason: it gets black burns and really hard to remove. Clay covers can be thrown right away) plate
  6. Cook it by turning the skewers momentarily for 5-10 minutes.
  7. You will start getting an amazing aroma of ginger and other spices.

If you do not have skewers, you can use iron/aluminum nets available in common hardware store. If you are using iron one, make sure you clean properly before using it. Also, a good amount of burn before use will kill its unwanted stuff.

If you do not have any grilling vessel, you can simply dig 6 inches in the ground and use 3 bricks.
